For these cupcakes I used the same yummy frosting from Your Cup of Cake that I did on my peach cupcakes. It was perfectly light, and it made a really great pairing with the cupcakes!
Pumpkin Juice Cupcakes:
1 box yellow cake mix
3/4 cup pumpkin
3 eggs
1/3 cup oil
1/3 cup water
1 tsp pumpkin pie spice
orange food coloring (optional)
